I just got around to memorizing the opcode for "JP (HL)" (E9). However, executing it seems to yield "PC=HL" instead of "PC=(HL)". Either I've messed up somewhere, or plenty o' documentation is wrong...
You're misunderstanding it. It's phrased as jp (hl) because jp hl could get mistranslated as jumping to the label called hl:.
Ah. Silly assemblers!
So yes, just to summarize, jp (hl) makes PC=HL, not PC=(HL)
